In order to make jam, you will need 4 pints of strawberries, 2 tablespoons of lemon juice, 6 tablespoons of classic pectin, 5 pounds of sugar, 6 jelly jars, 6 sets of self-sealing canning lids, a boiling water canner, and enough water to fill the canner. First, you need to cut the tops off of all the strawberries and then cut the bottoms in half. Add the strawberries, lemon juice, and pectin to a stockpot on the stove. Cook on medium heat until the mixture begins to boil. Add the sugar and stir until all the sugar is dissolved. Return to a boil and once a hard boil is achieved for 1 full minute, remove from the heat. Scoop the hot jam into hot jars allowing for 1/2 inch of head space, seal with two-part lids and process in the boiling water canner for 10 minutes.
